So I’ve REALLLY been liking the whole casserole idea, they make lots of servings and leave leftovers for meals the next day. Tonight’s low cost meal is another great casserole.
Heather over at Ourkidsmom has a vegetarian family of 6 and while she posts a lot of recipes that are vegetarian, they are easily adaptable to families like mine who love meat.
Tonight I tried another recipe of Heather’s, Taco Casserole! (With Meat!)
Here is what you will need:
Ingredients

1 Lb of ground beef or turkey

1 package of taco seasoning
-
water
-
1 – 15oz. canned corn
-
1 – 8oz. canned tomato sauce
-
1 bag of tortilla chips
-
1 – 15oz can of beans (refried or black, we used black)
-
1/2 onion – diced
-
2 cups of shredded cheese (I used Kraft Mexican Blend)
Instructions
Brown the ground beef or turkey along with the diced onion. Drain and rinse. Mix in the taco seasoning and prepare according to instructions on packet. Allow the meat to simmer for just a few minutes. Then add your tomato sauce and canned corn, allow to cook for a few more minutes.
Grease a 9X13 pan with Pam.
The chips and mixture will be layered into the pan like a lasagna. Layer the pan bottom with crunched up chips (Don’t make them too small). Then add a layer of your meat mixture. Third Layer will be cheese. Continue this until your mixture is gone, ending with the meat mixture as your last layer.
Top your casserole with a layer of beans and add cheese to the top.
Bake at 350 degrees for 15-20 minutes until hot and yummy.
Top with lettuce, sour cream or whatever toppings that you like to add

Looks delicious! We love taco night. It’s one of my grandson’s favorite meals.
i love this idea! We have tacos and the kids are on such strange sports schedules.It means getting all the ingredients/components out at 4 different times from the fridge sometimes. And then we warm the shells too so it is a pain. THIS can be made ahead and each can take out a portion from ONE container. So many times someone has left a leftover out on the stovetop and was wasted. This would appeal the kids, our budget, and save time too! Bravo!

I think my kids would really like this, minus the beans (I think it’s a texture thing). Casseroles are so easy and fun, you can put in whatever you like and just bake it!
